A hearty and healthy breakfast turkey-spinach-sweet potato casserole you can make on the weekend and take to work with you through the week!

Christie's Take

I'm always a fan of dishes I can make ahead of time and have all week. Sweet potatoes are filling, getting all food groups in this one recipe and it's fairly cheap, since you'll likely already have most of these ingredients. Reheats well also!

Ingredients

  • cooking spray

  • 2 cups peeled and shredded sweet potatoes

  • 1 (16 ounce) package lean breakfast turkey sausage links

  • 2 cups fresh spinach

  • 12 large egg whites

  • ¼ cup almond milk (unsweetened or a milk of your preference)

  • ¾ teaspoon dried sage

  • ¼ teaspoon red pepper flakes

  • ¼ teaspoon ground thyme

  • ¼ teaspoon dried oregano

  • ¼ teaspoon dried basil

  • 1 pinch ground nutmeg

  • salt and ground black pepper to taste

  • 1 tablespoon grated Parmesan cheese
